In my previous post, I shared a super easy way to make Thai chili oil paste. It is a key condiment that gives Tom Yum soup its vivid and appealing red color. Nowadays, you can also find the premade version of chili oil paste along with many brands of pre-made Tom Yum paste in supermarkets. But here’s why you should make your own chili oil paste;
- It tastes fresher and more flavorful. The result is a world difference between when you use premade Tom Yum paste. The aroma is a lot weaker, lacking the refreshing fragrance of fresh herbs. It is because many producers tend to use fewer herbs and more seasonings. Premade Tom Yum paste is generally made by using dried herbs to keep longer, and then adding finely minced dried shrimps or chicken meat to add texture, finally seasoning with a lot of sugar and who knows what other seasonings. All this may or may not show on the labels.
- It is far healthier to make condiments from scratch. I am no advocate to premade condiments and meals. I choose to make condiments at home from scratch as much as possible, because when you know where they came from it is more assuring that there is no unwanted chemicals and ingredients. Industrial processed food usually contains various chemicals and unknown ingredients; they are added to better preserve and enhance both flavors and visual appeals. It is logical to manufacturers because the aim is to make what passed its prime looks appetizing again.
Let’s come back to the origin of Tom Yum; it originated from central Thailand. The name “Tom Yum” comes from a combination of 2 words; Tom and Yum. In Thai, “Tom” means to boil and “Yum” refer to a group sour salad, originates in Thai and Laotian cuisine. As the name suggests, the taste of traditional Tom Yum soup is dominated with sourness. Then it is followed by saltiness, spiciness and finishes with touch of sweetness.
When it comes to ingredients, it is quite a laid-back dish; there is almost no rule. A variety of meat and seafood (plus other processed food) can be added. The choice is limitless from beef, pork, chicken, shrimp, and octopus to fish balls or even imitation crab. The range of vegetable is rather wide as well, but the most popular choices are different mushrooms and tomatoes and sometimes cabbages. The more exotic choices for vegetables are such as banana flowers. The only rule is lemongrass, kaffir lime leaf, lime juice and galangal is essential to crate the authentic aroma.
The recipe today is a version of Thai Tom Yum soup that is the most known; Tom Yum Soup with Shrimps and Mushrooms. Now let’s have a look at the ingredients. This amount is suitable for 2 servings.
- 1 stalk lemongrass, cut into 2-inch pieces and lightly crushed
- 2-3 kaffir lime leaves, midline removed
- 2-3 pieces of galangal, cut to around 1-cm pieces
- 1 small Asian shallot or 1/4 onion, crushed or sliced respectively (optional)
- 6-8 shrimps (or as much as you can eat), shell removed and deveined
- A handful of mushrooms of your choice, cut to bite-size pieces
- Desirable amount of fresh chilies, crushed (optional)
- 1 tomato, cut into 6 moon-shaped pieces
- A pinch of coriander leaves for garnish
- 1 tbsp. Thai chili oil paste (Click here to see homemade recipe)
- 1/4 cup creamy soya milk or evaporate milk
- 1 tbsp. fish sauce or to taste
- 1 pinch of salt or to taste (optional)
- 1/2 -1 tsp. brown sugar (palm sugar is preferred) or to taste
- Juice of 1/2 lime (a bit more than 1 tbsp.) or to taste
- 1 scant cup chicken stock or water
Tips
- Cut the stalk into 2-inch pieces. After that halve the bottom length-wise and crush the rest with a mortar or a blade of a knife.
- Kaffir lime leaf; first separate the leaf into 2 pieces. Then fold in halve vertically, finally tear the leaf vertically follow the midline.
- Galangal; cut the galangal into 1 centimeter-size pieces.
- Traditionally, straw mushrooms are used in Tom Yum. But you can use any of your favorite mushrooms. I usually use button mushrooms, king oyster mushrooms and shimeji mushrooms.
- If you are not a fan of fish sauce, add the sauce in early stage of cooking and let the smell evaporate with the steam. Also, the fresh aroma of lime juice is very effective in covering fish sauce smell.
- Once the shrimps are added, do not stir the soup until the shrimps are cooked or else the soup will smell fishy.
- Do not put lime juice in the soup when boiling, it will give bitter taste.
Despite a long list of ingredients, Tom Yum is very easy to make. The whole process of preparation and cooking should take around 15 minutes.
- Make aromatic soup. Put soup stock add lemongrass, kaffir lime leaves, galangal and Asian shallot or onion (if using) in a pot. Wait until the water is boiled and aromatic.
- Season and add the rest of the ingredients. Once the soup smells herby, season with fish sauce, sugar, Thai chili oil and milk and wait until it begins to boil. Add shrimps and mushrooms. At this point, you can lower the heat, if it’s boiling too much.
- Turn off the heat and add lime juice. Once the shrimps and the mushrooms are cooked, turn off the heat, add tomatoes and remove from the stove. Add lime juice and make a final tasting. Adjust again if needed.
- Serve in a bowl. Separate herbs from the soup and remove to a bowl. Garnish with coriander leaves before serving.

- 1 pinch of salt or to taste (optional)
- 1/2 -1 tsp. brown sugar (palm sugar is preferred) or to taste
- Juice of 1 lime (around more or less 1 tbsp.) or to taste
- 1 cup chicken stock or water

Directions
- Make aromatic soup by putting lemongrass, kaffir lime leaves, galangal and Asian shallot (or onion) in soup stock or water and wait until boiled and aromatic.
- Season with fish sauce, sugar, Thai chili oil paste and milk, and then add shrimps and mushrooms. Lower the heat if needed.
- Once the shrimps and the mushrooms are cooked. Add tomatoes, turn off the heat and remove from the stove. Add lime juice and make a final adjustment on the taste.
- Separate herbs from the broth and remove to a bowl. Garnish with coriander leaves and serve.

สวัสดีค่ะ ยังจำกันได้ไหมคะว่าในโพสต์ที่แล้ว แพรวแชร์สูตรทำน้ำพริกเผาแบบง่ายกับเพื่อนๆ ไป พอทำน้ำพริกเผาแล้วก็เลยเกิดหิวต้มยำขึ้นมา บางคนอาจมีคำถามในใจว่าทำไมต้องทำน้ำพริกเผาเองด้วย ทั้งๆ ที่หาซื้อง่ายตามท้องตลาด ยังไม่พอตอนนี้ยังหาซื้อเครื่องต้มยำสำเร็จรูปในโหลได้ตามซุปเปอร์มาเก็ตอีกต่างหาก แพรวตอบได้เลยว่าด้วยเหตุผลหลักๆ 2 ข้อ
- ได้รสชาติที่สดใหม่กว่า ถ้าเทียบระหว่างใช้เครื่องต้มยำโหลกับใช้สมุนไพรสดกับน้ำพริกเผาทำเองแล้ว รสชาติจะต่างกันเยอะ กลิ่นหอมของสมุนไพรจะอ่อนกว่าและไม่สดชื่นเท่าสมุนไพรสด อันนี้เป็นเพราะ ผู้ผลิตมักใช้สมุนไพรน้อยกว่าแต่ปรุงแต่งซะเยอะ ส่วนใหญ่ใช้สมุนแห้งเพื่อให้สามารถเก็บได้นานขึ้น จากนั้นก็ผสมเนื้อสัตว์ลงไปบ้างเพื่อไม่ให้เหลว สุดท้ายก็ปรุงสี กลิ่น รสด้วยน้ำตาล และอื่นๆ อีกมากมาย ซึ่งอาจจะไม่ได้เขียนละเอียดบนฉลาก
- ไม่ต้องกังวลเรื่องสารเคมี ถ้าเราทำเองที่บ้าน แพรวชอบทำเครื่องปรุงเองที่บ้านมากกว่า ด้วยเหตุผลเรื่องรสชาติและความสะอาด ถ้าเราทำเองเราสามารถมั่นใจได้ว่าเราใส่อะไรลงไปบ้าง และไม่มีสารกันบูด สีผสมอาหารและสารแต่งกลิ่น
ออกนอกเรื่องกันมาสักพักแล้ว เรากลับมาดูสูตรต้มยำของเรากันค่ะ อย่างที่เพื่อนๆ ทราบกันว่าราสชาติของต้มยำนั้นจะนำด้วยเปรี้ยว ตามด้วยเผ็ดหรือเค็ม แล้วตบท้ายด้วยหลานเล็กน้อย เพื่อนๆ จะเห็นว่าต้มยำมีหลากหลายชนิด ใช้ส่วนผสมได้หลากหลาย แต่วันนี้เราจะมาดูสูตรต้มยำกุ้งน้ำข้นใส่เห็ดกันค่ะ มีส่วนผสมตามนี้ค่ะ
- ตะไคร้ 1 ต้น ตัดเป็นชิ้นๆ ยาวประมาณ 2 นิ้ว จากนั้นทุบเล็กน้อย
- ใบมะกรูดฉีกกลาง 2-3 ใบ
- ข่าหั่นแว่น 2-3 ชิ้น ยาวประมาณชิ้นละ 1 เซนติเมตร
- หอมแดงทุบ 1 หัว
- กุ้ง 6-8ตัว (หรือตามใจชอบ) แกะเปลือกออกแล้วดึงเส้นกลางหลังออก
- เห็ดตามใจชอบประมาณ 1 กำมือ อย่างลืมตัดเป็นชิ้นพอคำ
- พริกขี้หนูสดทุบ จำวนตามชอบ
- มะเขือเทศ 1ลูก หั่นเป็น 6 ชิ้นตามยาว
- ใบผักชีสำหรับตกแต่ง
- น้ำพริกเผา 1 ช้อนโต๊ะ (คลิ๊กเพื่อดูสูตรโฮมเมด)
- นมถั่วเหลืองข้นๆ หน่อย หรือนมคาร์เนชั่น ¼ ถ้วยตวง
- น้ำปลา 1 ช้อนโต๊ะ หรือตามชอบ
- เกลือเล็กน้อย เพื่อปรับรส
- น้ำตาล 1/2 -1 ช้อนชา หรือตามชอบ
- น้ำมะนาวครึ่งลูก หรือประมาณ 1 ช้อนโต๊ะบวกๆ หรือตามชอบ
- น้ำซุปไก่ หรือน้ำเปล่า 1 ถ้วยตวง
เคล็ดลับ
- ตัดตะไคร้เป็นชิ้นๆ ตามขวาง ยาวประมาณ 2 นิ้ว จากนั้นหั่นครึ่งถ้าชิ้นใหญ่เกินไป แล้วทุบด้วยสากหรือใบมีดเล็กน้อย
- ฉีกใบมะกรูดออกเป็น 2 ชิ้น พับครึ่งตามเส้นกลางใบ แล้วฉีกเป็น 2 ชิ้น
- ตัดข่าตามขวางเป็นชิ้นๆ ยาวประมาณ 1เซนติเมตร
- หลังจากใส่กุ้งลงไปในซุป อย่าคนทันทีเพราะจะทำให้ซุปคาว
- ไม่ควรใส่น้ำมะนาวลงไปขณะต้ม เพราะจะทำให้ซุปขม
ถึงส่วนผสมจะเยอะสักหน่อย แต่ขั้นตอนการทำทั้งเตรียมเครื่อง และปรุงใช้เวลาประมาณ 15 นาทีเท่านั้น
- ต้มน้ำซุป เริ่มด้วยใส่ตะไคร้ ใบมะกรูด ข่าและหอมแดงในน้ำซุปหรือน้ำเปล่า แล้วตั้งไฟ รอให้น้ำเดือดและมีกลิ่นหอมจากสมุนไพร
- ปรุงรส แล้วใส่ส่วนผสมที่เหลือ พอซุปหอมแล้วให้ปรุงด้วยน้ำปลา น้ำตาล น้ำพริกเผา และนม รอให้เริ่มเดือด จากนั้นใส่กุ้งและเห็ด ลดไฟลงถ้าเดือดแรงเกินไป
- ปิดไฟและใส่น้ำมะนาว เมื่อกุ้งและเห็ดสุกใส่มะเขือเทศลงไป ปิดไฟและยกลงจากเตา เติมน้ำมะนาว และปรับรสชาติเป็นครั้งสุดท้าย
- เสิร์ฟในชาม แยกสมุนไพรออกจากซุป แล้วเทซุปใส่ชาม โรยผักชีก่อนเสิร์ฟ

- ปรุงรสด้วยน้ำปลา น้ำตาล น้ำพริกเผา และนม รอจนเดือดอีกครั้งแล้วใส่กุ้งและเห็ด ถ้าเดือดแรงเกินไปให้ลดไฟลง
- เมื่อกุ้งและเห็ดสุก ให้ใส่มะเขือ จากนั้นปิดไฟยกต้มยำลงจากเตา แล้วใส่น้ำมะนาว ชิมรสชาติ และปรับตามชอบ
- แยกสมุนไพรออกจากน้ำ แล้วเทน้ำซุปใส่ชาม โรยหน้าด้วยผักชีแล้วเสิร์ฟ
