This Chinese version of stuffed bell pepper is packed with both vitamins and flavor. The bell pepper itself is a powerhouse of vitamins and carotenoids and it also have that after-cooked sweetness. This goes well a light and fluffy stuffing. And that’s not all; it is top with a sweet yet slight sour sauce, which adds freshness to the dish.

Welcome to Praew’s Kitchen Escape; my journey of clean and sustainable life, starting from my very own kitchen. Today’s recipe is a really spontaneous one; I decided to make this recipe because I happened to stumble on these tiny bell peppers (or capsicum) in a local market.

It felt almost like a fateful encounter! As my hand was choosing the produces, my brain thought these will make perfect bite-size pieces of Chinese stuffed bell peppers. Although, the shapes of the fruits and vegetables that I commonly found in fresh markets here, are not so uniform. These peppers were grown by a local farmer in a small plot not too far from my town. I have a personal belief that any fruits and vegetables would taste good, as long as there are no bruises and no insect holes. If you can’t find any mini-size bell peppers, you can also use normal-size ones or Mexican green chilies for this recipe.

Let’s get to know more about this dish. Chinese stuffed bell pepper is originated from Southern China. It is quite a common dish on Dim Sum menus. For me, the key delight of this dish is its stuffing, which should be light and fluffy in texture. This texture can’t be achieved by using minced pork alone; it needs to be mixed to some seafood to loosen up the texture. However, mixing meat with seafood may sound a little uncommon in western cuisine, but this is a common practice in many Asian dishes.

This recipe is suitable for 4 servings. Now for the ingredients;

Ingredients;

100g minced pork
100g minced fish*
2 green onions, minced
1 tbsp. soy sauce
1 tbsp. Sake rice wine or Shaoxing wine
1 tsp. sesame oil
1 tsp. corn starch, plus a scant tbsp. for dusting
A pinch of salt
3 tbsp. chicken stock
Around 3 small bell peppers (I used 8 mini-size bell peppers)
1 tsp. vegetable oil for frying

For the dressing sauce:

1/2 cup chicken stock
1-1 ½ tsp. soy sauce (or to taste)**
1 ½ tsp. Sake rice wine or Shaoxing wine
1 tbsp. rice vinegar
1/2 tsp. sugar (or to taste)
1/2 tsp. fermented soy bean paste***
1 tsp. corn starch, mixed with same amount of water****

Before we proceed:

*Fish: Any white flesh fish is fine to use; such as tilapia, I used snapper. Since we are mixing it with the pork, you don’t have to use an expensive one. You can also change to shrimps as well.

**I used dark soy sauce in this recipe because I want a dark color sauce. You can use normal soy sauce, too. The color will lighter.

***The traditional recipe calls for fermented black beans, but I can’t find it near where I live. I used Korean fermented bean paste instead. I guess miso should be good, too.

****Don’t forget to stir mixture. After you leave it a couple of minutes, the water and corn starch will separate.

This recipe will take around 5-10 minutes preparation time, 30 minutes inactive time and 10 minutes cooking time.

Directions:

Mince fish by using a cleaver or a heavy knife. To make it easier, first cut the fish into small pieces and then start mincing. This will produce a finer result.
Finely mince fish
Make the stuffing. Add all the stuffing ingredients, starting from minced pork and fish, minced green onion, and then add all seasonings in a mixing bowl. Mix well until combine into a thick paste by using a spoon or a fork. Scoop and throw it back into the bow to chase out air a couple of times. Cover with a lid or plastic wrap, and then rest for around 30 minutes to 1 hour in the refrigerator.
Make a light and fluffy stuffing
Prepare the bell peppers for stuffing. While waiting, for the stuffing to rest, we can prepare the bell peppers. Cut them in half lengthwise and carefully remove the stem (if you use too much force, it might tear into the flesh of the fruit). Finally, discard all the seeds and set aside.
Clean and prepare the bell peppers (or capsicums)
Stuff the bell peppers. Stuff each piece of the bell peppers with fish and pork mixture with a table knife or a spoon, until the stuffing reach the edge of the peppers. Once done, sprinkle corn starch thinly on the stuffed size of the peppers and set aside. This will help the stuffing stays in its place and prevent sticking.
Stuff each of the bell peppers, add the stuffing until it reaches the edge of the peppers
Fry the stuffed bell peppers. Heat the frying oil in a sauce pan on medium heat. Put the bell peppers in the pan with their stuffing side down. Cook until brown around 2 minutes. Flip the bell peppers; add a dash of sake or shaoxing rice wine and 1-2 tbsp. of water and cover for another 2 minutes. Remove the pan and put in a plate.
Fry the stuffed bell peppers in medium heat
Make sweet and sour dressing sauce. In the same sauce pan, add chicken stock and bring to boil. Season with all the seasonings and bring to a boil again. Add corn starch mixture and stir well until thicken and boil. Finally, spoon the sauce on the bell peppers and it is ready!
Make dressing sauce, spoon on the bell peppers. And it’s ready to enjoy!

A healthy blend of light and fluffy stuffing and high-nutrient bell peppers

Ingredients

ตอนแพรวเลือกพริกที่ตลาด มือก็เลือกไป ส่วนใจก็คิดว่าเอามาพริกหยวกยัดแบบจีนไส้น่าจะขนาดกำลังพอดีคำ ถึงหน้าตาจะไม่สวยเท่าเวลาเราซื้อจากซุปเปอร์ ลองถามแม่ค้าดู เข้าใจว่าเค้าปลูกกันแบบ้านๆ ไม่ไกลจากตัวเมืองเท่าไร ถ้าเพื่อนๆ หาพริกหยวกจิ๋วไม่ได้ ก็ใช้พริกหยวกธรรมดาแต่เลือกให้เล็กหน่อย หรือจะใช้พริกหนุ่มแทนก็ได้

ก่อนลงมือทำ เรามาทำความรู้จักกับอาหารจานนี้กันเถอะ พริกหยวกยัดไส้แบบจีนมีต้นกำเนิดมาจากทางใต้ของประเทศจีน แพรวว่าหลายคนคงจะคุ้นเคยกับเมนูนี้ตามร้านอาหารติ่มซำ โดยส่วนตัวแล้ว แพรวว่าจุดเด่นของอาหารจานนี้ คงหนีไม่พ้นที่ตัวไส้ซึ่งควรมีรสสัมผัสนุ่มๆ เบาๆ ทำให้ต้องมีการผสมเนื้อ 2 ประเภทเข้าด้วยกัน โดยอาศัยเนื้อปลาสับมาเพิ่มความเบาให้กับเนื้อหมูสับ

สูตรนี้สำหรับเสิร์ฟได้ 4 ที่ เรามาดูส่วนผสมกันค่ะ

ส่วนผสม

เนื้อหมูบด 100 กรัม
เนื้อปลาสับ 100 กรัม*
ต้นหอมสับละเอียด 2 ต้น
ซอสถั่วเหลือง 1 ช้อนโต๊ะ
สาเก หรือเหล้าจีน 1 ช้อนโต๊ะ
น้ำมันงา 1 ช้อนชา
แป้งข้าวโพด หรือแป้งมันสำปะหลัง 1 ช้อนชา บวกประมาณเกือบ 1 ช้อนโต๊ะเอาไว้โรยหน้า
เกลือ 1 หยิบมือ
น้ำสต็อกไก่ 3 ช้อนโต๊ะ
พริกหยวกเขียวประมาณ 3 ผล (แพรวใช้พริกหยวกจิ๋ว 8 ผล)
น้ำมันพืชสำหรับทอด 1 ช้อนชา

ซอสสำหรับราด

น้ำสต็อกไก่ 1/2 ถ้วย
ซอสถั่วเหลือง 1-1 ½ ช้อนชา หรือตามชอบ**
สาเก หรือเหล้าจีน 1 ½ ช้อนชา
น้ำส้มสายชู 1 ช้อนโต๊ะ
น้ำตาล 1/2 ช้อนชา หรือตามชอบ
เต้าเจี้ยวดำ 1/2 ช้อนชา***
แป้งข้าวโพด หรือแป้งมันสำปะหลัง 1 ช้อนชา ผสมกับน้ำในประมาณเดียวกัน****

ข้อแนะนำและควรระวัง

*แนะนำให้ใช้ปลาเนื้อขาว ราคาไม่ต้องแพงเพราะเราเอามาสับอยู่แล้ว แพรวใช้ปลากระพงเพราะที่บอร์เนียวราคาไม่แพงค่ะ เพื่อนๆ อาจเปลี่ยนเป็นกุ้งก็ได้ แต่จะได้รสสัมผัสที่ต่างกันนิดหน่อย

**แพรวใช้ซอสถั่วเหลืองชนิดสีเข้ม เพราะว่าอยากได้ซอสสีเข้ม เพื่อนๆ ใช้ซอสถั่วเหลืองธรรมดาก็ได้ค่ะ แต่สีจะอ่อนกว่า

***ปกติตามร้านจะใช้เต้าเจี้ยวดำ หรือเต้าซี่ แต่แพรวหาซื้อไม่ได้เลยใช้ถั่วหมักของเกาหลีแทน ถ้าเพื่อนๆ อยากลองก็ใช้มิโซะก็น่าจะได้นะคะ รสชาติจะเบาลงหน่อย

****อย่าลืมคนส่วนผสมระหว่างแป้งข้าวโพด (หรือแป้งมันสำปะหลัง) กับน้ำนะคะ เพราะเวลาเราทิ้งไว้แค่พักเดียว เค้าก็จะแยกตัวออกจากกันค่ะ

ระยะเวลาทำอาหารจานนี้จะใช้เวลาเตรียมเครื่องปรุงประมาณ 5-10 นาที เวลาหมักไส้ 30 นาที และเวลาปรุง 10 นาที

วิธีทำ

สับปลาเตรียมไว้ เวลาสับอาจใช้มีดปังตอ หรือถ้าใครไม่มีก็หามีดใหญ่ๆ หนักๆ หน่อยค่ะ เพื่อให้ง่ายขึ้น ให้หั่นปลาเป็นชิ้นเล็กๆ ก่อนแล้วค่อยสับ จะทำให้ละเอียดขึ้น
สับปลาเตรียมไว้
ทำไส้สำหรับยัด ใส่ส่วนผสมต่างๆ เริ่มตั้งแต่เนื้อหมูบด ปลาสับ และต้อนหอมสับลงไปในชามผสม จากนั้นใส่เครื่องปรุง แล้วคนจนส่วนผสมดูเนียนเข้ากันดี หาฝามาปิดหรือใช้พลาสติกใส่ห่อ ทิ้งไว้ในตู้เย็นประมาณ 30 นาที ถึง 1 ชั่วโมง
ทำไส้สำหรับยัด โดยคลุกเคล้าส่วนผสมจนเป็นเนื้อเดียวกัน
เตรียมพริกหยวก เริ่มจากตัดครึ่งตามยาว แล้วค่อยๆ ดึงก้านออก ระวังอย่าดึงแรงเกินไป ไม่งั้นมันจะฉีกเข้าเนื้อพริก สุดท้ายก็แกะเมล็ดทั้งหมดออก แล้วพักไว้
ล้างและหั่นพริกหยวก
ยัดไส้พริกหยวก นำไส้สำหรับยัดที่พักไว้แล้วยัดใส่พริกหยวก เพื่อนๆ สามารถใช้มีดหรือช้อนในการตักและปาดไส้ในขั้นตอนนี้ค่ะ ใส่ไส้จนกระทั่งไส้อยู่ในระดับเดียวกับพริกหยวกตามภาพค่ะ พอยัดเสร็จแล้วให้โรยแป้งบนด้านที่ใส่ไส้เพื่อไม่ให้ติดกับกระทะ
ยัดไส้ที่เตรียมไว้ในพริกหยวก จนอยู่ในระดับเดียวกับพริก
ทอดพริกหยวกยัดไส้ เริ่มจากเอากระทะตั้งไฟที่ไฟกลาง ใส่น้ำมันนิดนห่อย จากนั้นใส่พริกหยวกลงไปโดยคว่ำหน้าที่ยัดไส้ลง ทิ้งไว้สัก 2 นาทีหรือจนกระทั่งเริ่มเปลี่ยนสี ต่อมาให้พลิกพริกหยวกแล้วใส่สาเกหรือเหล้าจีนและน้ำเปล่าลงไปนิดหน่อย ปิดฝาปล่อยให้นึ่งประมาณ 2 นาที จากนั้นตักใส่จาน
ทอดพริกหยวกที่ยัดไส้แล้ว
ทำซอสราด ใส่น้ำสต็อกไก่ลงในกระทะใบเดิม พอเดือให้ปรุงด้วยเครื่องปรุงแล้วรอให้เดือดอีกรอบแล้วใส่แป้งข้าวโพด หรือแป้งมันสำปะหลังละลายน้ำลงไป แล้วคนจนกระทั่งข้น รอให้เดือดเป็นครั้งสุดท้าย จากนั้นตักราดบนพริกหยวก แค่นี้เป็นอันเสร็จ!
