Chinese Sichuan cuisine is famous for its spicy and vibrant dishes. One of the key features of this cuisine is the use of aromatic chili oil to please sight, smell and taste at the same time. As a part of the cuisine, Sichuan noodle soup is characterized by its bright red color and spiciness. Another plus point is that it is simply delicious and easy to make! It only takes about 15 minutes to assemble; it is a perfect dish for any lazy days

Welcome back to Ramen@home series, which I posted homemade recipes of ingredients for noodle soups. I hope by the end of this short read, I could inspire you to make homemade food from scratch. Back to Sichuan noodle soup with dumplings. Although, this is dish isn’t really a ramen (Japanese-style noodle soup), it shares many resemblances (as well as share the similar origin).

The truth is I always have a thing for this kind of noodle soup. It is like a comfort food to me. And for Sichuan-style noodle soups, I fell in love with them years back when I first stumbled on them by accident in Hong Kong years back. The first time I tasted it was actually on a cold rainy day. At first, the bright red color was a little bit intimidating, but I gathered my courage and took a spoonful of soup (tasting soup first is kind of a customary practice when having a bowl of noodle soup). The smell of spices and herbs, which I later learned that it is a fragrant of Chinese chili oil, inspired me to cook Chinese cuisine.

Back to the present, I am now living in Borneo, where not surprisingly it rains a lot. Every week (or two) I normally prepare many ingredients from scratch and freeze or store in a container for later. Items, such as homemade noodle, dumpling and different kinds of stock, are essential in my freezer. On a lazy day, all I to do is bring them together to recreate my version of Sichuan noodle soup. It may sound like loads of work but it isn’t really. You will be surprised how fast and efficient it is for weekdays. For the links for my homemade recipes, please see below.

Let’s have a look on the ingredients. For a bowl of Sichuan noodle with dumplings, you will need;

Please note that you can always replace these homemade ingredients with store-bought, if you don’t have time. Now let’s start cooking.

First, prepare the vegetables. Make a shallow cut from top to bottom of the stalk. Separate outer layers from inner layers of the green onion

First, prepare the vegetables. Make a shallow cut from top to bottom of the green onion stem. Separate as many layers as possible and vertically slice. Mince the inner part of the green onion stem. For bok choy, if it is big, use 4-5 leaves. But if it is small, halve it vertically.  Finally, separate mushroom head from its stem.

Now it’s time to cook. Start by heating the simultaneously 2 pots on high; one with chicken stock and the other with salt water. Wait until the both are rolling boiled, then reduce the heat for chicken stock to medium and put the dumplings and mushroom to cook for 2-3 minutes and put the bok choy to blanch for 1 minute. The mushroom, will release its umami to the broth. At the same time, add the noodle in the pot with salt water, leave to cook for 2-3 minutes (or according to instructions on its package).

Prepare the soup seasonings in a bowl and set aside

While waiting, prepare a bowl by putting a splash of hot water to warm it and then discard of the water. Add minced green onion stem, chili oil, shallot/black pepper oil and soy sauce in the bowl and set aside.

Add noodle and garnish with toppings

Once the dumplings and the noodle are cooked, turn off the heat. Drain the noodle, once it is cooked. Put first the noodle into the bowl and mix lightly to let it absorb the oils. Pour in the stock, and then arrange the dumplings and bok choy on top of the noodle. Finally garnish with sliced green onion stem. And it is ready.

Final tips, there are many types of soy sauce. If the one that you are using makes the color of the broth too dark, you can adjust by reducing the soy sauce and use salt as well. Enjoy cooking homemade!

  2. Heat the simultaneously 2 pots on high; one with chicken stock and the other with salt water. Wait until the both are rolling boiled.
  3. Reduce the heat for chicken stock to medium and put the dumplings and mushroom to cook for 2-3 minutes and put the bok choy to blanch for 1 mintue. At the same time, add the noodle in the pot with salt water, leave to cook for 2-3 minutes (or according to instructions on its package).
  4. Prepare the bowl by putting a splash of hot water to warm it. Add minced green onion stem, chili oil, shallot/black pepper oil and soy sauce in the bowl and set aside.

อย่างที่เพื่อนๆ ทราบกันดีว่าอาหารจีนสไตล์เสฉวนจะมีรสชาติและสีสันที่จัดว่าจัดจ้านทีเดียว ลักษณะเด่นอย่างหนึ่งของอาหารประเภทนี้ คือการใช้น้ำพริกเผาแบบจีนที่สกัดความหอมมาจากเครื่องเทศและสมุนไพรหลายชนิด ซึ่งไม่แค่ให้รสชาติ แต่ยังกลิ่นและสีแก่อาหารอีกด้วย และสร้างความเพลิดเพลินกับหลายประสาทสัมผัสไปในเวลาเดียวกัน แค่เขียนก็หิวแล้วสิ เพราะเจ้าก๋วยเตี๋ยวสไตล์เสฉวนก็มีแชร์ลักษณะเด่นนี้เหมือนกัน แต่ข้อดีของก๋วยเตี๋ยวชามนี้ไม่ได้หมดแค่นี้ แต่ยังมีความง่ายที่ใช้เวลาทำแค่ 15 นาที ในการประกอบร่างเท่านั้น เหมาะกับวันที่ขี้เกียจทำกับข้าวจริงๆ

จุดเด่นของก๋วยเตี๋ยวสไตล์เสฉวนคือน้ำซุปสีแดงแป๋น

ความจริงแพรวชอบทานก๋วยเตี๋ยวมาก พอได้ทานก๋วยเตี๋ยวร้อนๆ กับน้ำซุปแล้วรู้สึกสบายใจ แพรวลิ้มรสก๋วยเตี๋ยวสไตล์เสฉวนครั้งตอนไปทริปที่ฮ่องกง วันนั้นเป็นวันฝนตกอากาศก็เย็น เดินมาก็สักพัก พอดีเดินผ่านร้านก๋วยเตี๋ยวเลยคิดว่าเอาน่ะ อย่างน้อยก็นั่งพักก็แล้วกัน ไม่รู้ว่าอะไรอร่อย ก็ชี้ไปที่โต๊ะข้างๆ ตอนแรกที่เค้าเอามาเสิร์ฟก็แอบตกใจกับสีที่ดูแดงเข้มซะขนาดนั้น แต่ก็นะ ลองตักซุปชิมดู สุดท้ายก็ตกหลุมรักกับกลิ่นเครื่องเทศจากน้ำพริกเผาจีน และนั่นก็เป็นจุดเริ่มต้นที่ทำให้แพรวสนใจอาหารจีน

กลับมาสู่ปัจจุบัน ตอนนี้แพรวอยู่บอร์เนียว ก็คงไม่น่าแปลกใจที่ฝนจะตกได้ตกดีขนาดนี้ โดยทั่วไป ทุกอาทิตย์ (หรือเว้นอาทิตย์) แพรวชอบใช้เวลาว่างทำส่วนประกอบของอาหารต่างๆ ไม่ว่าจะเป็น เส้นราเมนไข่ เกี๊ยวซ่า และน้ำสต็อกต่างๆ แช่เก็บไว้ทำอาหารระหว่างอาทิตย์ ทำให้ถ้าวันไหนเกิดอาการขี้เกียจทำกับข้าว ก็แค่ของในตู้เย็นมารวมกันนั่นเอง นี่อาจจะฟังเหมือนเป็นงานช้าง แต่เพื่อนๆ จะแปลกมันกลับทำให้เราประหยัดเวลาเตรียมอาหารได้เยอะ โดยเฉพาะระหว่างอาทิตย์ ถ้าใครสนใจวิธีทำส่วนประกอบโฮมเมดคลิ๊กลิงค์ด้านล่างได้เลยค่ะ

เรามาดูส่วนผสมสำหรับก๋วยเตี๋ยวเกี๊ยวซ่าสไตล์เสฉวนกันเลยค่ะ สัดส่วนนี้สำหรับ 1 ชาม

ถ้าใครไม่มีเวลาทำส่วนผสมเองที่บ้าน ก็ใช้ส่วนผสมที่หาซื้อได้ตามห้างก็ได้ค่ะ ตอนนี้เรามาลงมือทำกัน

แยกต้นหอมชั้นนอกออกจากชั้นใน ซอยชั้นนอก แล้วสับชั้นใน

เริ่มต้นด้วยการเตรียมผัก เริ่มจากต้นหอมญี่ปุ่น ให้ตัดตามยาวแต่อย่าให้ขาดนะ แล้วแยกชั้นลำต้นด้านนอกออก จากนั้นก็ซอยเป็นฝอย ส่วนลำต้นด้านในให้สับให้ละเอียด ต่อมาก็มาเตรียมกวางตุ้งไต้หวัน ถ้าหากต้นใหญ่ให้ใช้แค่ 4-5 ใบ ถ้าต้นเล็กหน่อยก็ตัดครึ่งตามยาว สุดท้ายก็ดึงหรือตัดดอกเห็นหอมออกจากลำต้น

ตอนนี้ก็ถึงเวลาปรุงแล้วค่ะ เริ่มจากตั้งไฟหม้อ 2 ใบพร้อมกัน ใบที่หนึ่งใส่น้ำสต็อกไก่ ส่วนอีกใบใส่น้ำเปล่ากับเกลือเล็กน้อย รอให้น้ำเดือดพล่าน แล้วลดความร้อนหม้อที่ใส่น้ำสต็อกลงที่ไฟกลาง แล้วใส่เกี๊ยวซ่าสดกับเห็ดหอมลงไป ต้มประมาณ 2-3 นาที แล้วใส่กวางตุ้งไต้หวันลงไปลวกประมาณ 1 นาที ด้วยวิธีนี้เราจะได้อุมามิจากเห็ดหอมในน้ำซุปของเราด้วย ในขณะเดียวกันให้ใส่เส้นบะหมี่ลงไปในหม้อที่ต้มน้ำเกลือ ทิ้งไว้ 2-3 นาที (หรือตามที่ระบุไว้ที่ซอง)

เตรียมเครื่องปรุงน้ำซุปในชามแล้วพักไว้

ขณะที่รอ ให้อุ่นชามด้วยน้ำร้อนเล็กน้อยแล้วเททิ้ง จากนั้นก็ใส่ต้นหอมสับ น้ำพริกเผาจีน น้ำมันหอมเจียวและพริกไทยดำ และซอสถั่วเหลือง เตรียมไว้

ใส่เส้น ซุป แล้วก็ตกแต่งด้วยเครื่อง

เมื่อเกี๊ยวซ่าและเส้นสุกได้ที่ปิดเตา แล้วสะเด็ดน้ำออกจากเส้น จากนั้นใส่เส้นลงในชามแล้วคนพอให้เข้ากัน เสร็จแล้วเทซุปแล้วจัดเกี๊ยวซ่า ผักกวางตุ้งไต้หวันไว้ข้างบน ปิดท้ายด้ายโรยต้นหอมซอยไว้ด้านบน แค่นี้ก็เสร็จ!

เคล็ดลับสุดท้าย ถ้าซอสถั่วเหลืองที่ใช้มีสีเข้มเกินไป ลองปรับโดยใช้เกลือแทนบางส่วนก็ได้นะคะ ขอให้สนุกกับการทำอาหารค่ะ

”วิธีทำ”

  3. เมื่อน้ำเดือดให้ลดความร้อนหม้อที่ใส่น้ำสต็อกลงที่ไฟกลาง แล้วใส่เกี๊ยวซ่าสดกับเห็ดหอมลงไป ต้มประมาณ 2-3 นาที แล้วใส่กวางตุ้งไต้หวันลงไปลวกประมาณ 1 นาที ด้วยวิธีนี้เราจะได้อุมามิจากเห็ดหอมในน้ำซุปของเราด้วย
  4. ขณะเดียวกันให้ใส่เส้นบะหมี่ลงไปในหม้อที่ต้มน้ำเกลือ ทิ้งไว้ 2-3 นาที (หรือตามที่ระบุไว้ที่ซอง)
